Grill heads & built-in grills: the heart of your outdoor kitchen
A grill head transforms a brick or modular kitchen unit in the garden into a real cooking station with professional character. In this guide you will learn how to choose the right built-in grill, install it safely and keep it in top shape for many years.
What exactly is a grill head?
A grill head - often also called a built-in grill, built-in grill or built-in head - is a grill unit without its own base that you integrate firmly into a worktop, a brick island or a modular outdoor kitchen system. While a classic gas grill stands on a mobile trolley with wheels and side shelves, the core of the grill head only consists of the upper part: combustion chamber, lid, grate, burner and control panel. You insert this „head" from above into a precisely fitting cutout in your kitchen, so that in the end you have a continuous, elegant work surface from which the grill naturally grows.
The great appeal lies in this integration. You plan your outdoor kitchen exactly the way you need it - with a sink, refrigerator compartment, drawers, pizza oven and the grill head as the central element. Nothing stands in the way, nothing looks as if it had been arranged. Instead of an appliance that you put away in the evening or hide under a hood, you get a fixed cooking area that fits the house, terrace and garden architecturally. Many of our customers describe the moment when the grill head is installed as the point at which the „grill corner" becomes a real outdoor kitchen.
Technically, grill heads are full-blown grills with all the trimmings. They offer large grill surfaces, several separately controllable burner zones, solid grates and often additional equipment such as infrared searing burners, rotisserie devices or illuminated control buttons. In our range you will find over 90 different grill heads - from compact two-burner models for narrow terraces to spacious devices with six or more burners for ambitious hosts who regularly cook for many guests.
In short: A grill head is the built-in version of a high-quality grill. You buy the grill power without the cart - and use it to plan your individual outdoor kitchen made of stone, stainless steel or a modular system.
Grill head or free-standing grill – which is right for you?
Before you decide on a built-in grill, it's worth making an honest comparison with the classic, free-standing grill. Both have their place, and the right choice depends on your garden, your budget and your plans.
A free-standing grill - whether a gas grill on a trolley, kettle grill or smoker - is flexible. You can move it around, put it in the garage in winter, take it with you on holiday to your holiday home or simply take it with you when you move. The purchase is usually cheaper because the trolley, the shelves and often a side cooker are already included. If you are not yet sure what your terrace should look like in the long term, or if you live in rent, a mobile grill is the pragmatic decision. You can find a large selection in our category Outdoor grills.
The grill head, on the other hand, is an investment in a permanent, planned solution. It is particularly worthwhile if you want to build or have an outdoor kitchen built anyway, if you have a permanent terrace with a roof and if you value a tidy, high-quality look. Instead of a cart with visible wheels, handles and cables, you get a seamless work surface. The grill head becomes a piece of furniture, not an appliance. There is also a practical point that is often underestimated: you usually have significantly more work space around a built-in grill than on the narrow folding shelves of a trolley - and this is exactly the space you need when preparing, marinating and serving.
| criterion | Grill head / built-in grill | Freestanding grill |
|---|---|---|
| optics | Seamlessly integrated, high quality, „like furniture" | Standalone device, visible cart |
| flexibility | Permanently installed, cannot be changed | Rollable, transportable, portable |
| work surface | Large continuous areas all around | Folding side shelves, limited |
| Planning effort | High: cutout, gas, ventilation | Low: unpack, connect, get started |
| investment | Higher, long-term thinking | Usually cheaper to start with |
| Ideal for | Fixed patio, outdoor kitchen, home | Tenants, flexible use, entry |
Our tip: If you are thinking about building an outdoor kitchen in the next one or two years, plan the grill head from the start. The subsequent integration of a free-standing grill into a brick row is time-consuming and rarely looks as clean as an installation solution that was well thought out from the start.
The advantages of a built-in solution in detail
Choosing a grill head brings with it a whole range of advantages that go beyond just the look. Here are the most important points that our customers mention again and again.
More space and better ergonomics
In a well-planned outdoor kitchen, you have continuous work surfaces to the left and right of the grill head. You can prepare the food to be grilled, put down plates, cut side dishes and mix sauces without running back and forth between the kitchen and the garden. The working height can be adjusted exactly to your height during construction - a level of comfort that no standard car offers. Anyone who grills a lot will notice the difference in their backs.
Longevity and value
A high-quality grill head made of strong stainless steel, built into a weatherproof row made of stone, concrete or powder-coated aluminum, will last for many years. The fixed installation protects sensitive components, the grill stands securely and wobble-free. A well-designed outdoor kitchen also increases the value of your property and is a real highlight at every garden party.
Clean technology without tangled cables
The gas hose, pressure regulator, any lighting and ignition disappear elegantly into the substructure. The gas bottle is located in a ventilated cabinet module or you connect it directly to a permanently installed natural gas pipe. Nothing hangs around, nothing disturbs the picture. This not only looks tidy, but also protects the technology from the weather and mechanical stress.
Individual design
You completely decide on the material, color, size and arrangement yourself. Whether it's a Mediterranean natural stone look, a puristic concrete look or a modern stainless steel line - the grill head fits into every concept. Combine it with a sink, refrigerator drawer, pizza oven or a side burner and build your dream outdoor kitchen step by step.
Burner types: gas, infrared and ceramic searing
The heart of every grill head is its burners. You determine how evenly the heat is distributed, how quickly the grill comes up to temperature and which cooking methods are possible. When it comes to grill heads, we basically differentiate between three types of burners, which are often installed in combination.
Classic gas burners (tube burners)
The standard in almost every grill head are longitudinal stainless steel burners, over which flame covers, aroma rails or lava stones sit. They distribute the heat evenly over the entire grill surface and can be finely regulated - from gentle cooking on a low flame to strong roasting heat. Several burners that can be switched separately allow direct and indirect grilling next to each other: sear on one side and cook more slowly on the other with the lid closed. Good pipe burners are the ideal basis for the vast majority of grilling tasks.
Infrared and ceramic burners (Sizzle Zone / Sear Station)
An infrared or ceramic burner, often referred to as a „sizzle zone", „sear station" or „searing burner", ensures the perfect steak. These burners generate extremely high temperatures, sometimes over 800 degrees Celsius, directly on the surface. The intense infrared radiation burns a strong crust on meat in seconds, closes the pores and creates the sought-after roasted aromas (Maillard reaction). A steak that is first burned in the sizzle zone and then cooked indirectly achieves steakhouse quality. Many high-quality grill heads have such a burner integrated on the side or as a switchable zone.
Rear burner for the rotisserie
If you like to prepare spit roast, whole chickens or a rolled roast on a rotisserie, pay attention to a rear burner (back wall burner). This infrared burner sits on the back wall of the combustion chamber and radiates heat evenly onto the rotating food. In combination with a rotisserie set, the meat cooks crispy and juicy all around, while the fat trap keeps the kitchen clean.
Practical tip: A grill head with three to four tube burners plus a separate sizzle zone covers practically all cooking methods - from slow, low-temperature cooking to spicy searing. This combination is the most versatile choice for most households.
Materials and stainless steel quality: 304 vs. 430
A grill head is left outdoors all year round and is exposed to heat, fat, acids from marinades, rain and frost. The material used therefore has a decisive influence on the service life and appearance. The most important material is stainless steel - and there are clear differences in quality that you should be aware of.
The two most commonly mentioned types of stainless steel are chrome-nickel steel 1.4301 (internationally referred to as „304") and pure chrome steel 1.4016 (internationally „430"). The difference lies primarily in the nickel content: 304 stainless steel contains around eight to ten percent nickel, which makes it significantly more corrosion-resistant and more resistant to pitting and rust. Stainless steel 430 is nickel-free, cheaper to produce, magnetic and slightly more susceptible to surface rust, especially in salty or damp environments.
| Characteristic | Stainless steel 304 (1.4301) | Stainless steel 430 (1.4016) |
|---|---|---|
| nickel content | approx. 8-10 % | nickel free |
| Corrosion resistance | Very high | Medium |
| Magnetic | No | Yes |
| Susceptibility to rust film | Small amount | Higher |
| Price | Higher | Cheaper |
| Recommended for | Housing, cover, visible components, proximity to the coast | Interior parts, facings, protected areas |
For particularly stressed and visible components – i.e. housings, lids, panels and grates – 304 stainless steel is clearly the better choice. It stays beautiful for a long time, hardly rusts and forgives a little carelessness in care. Stainless steel 430 is not inherently bad and is used in many models for internal or protected parts, where it fully serves its purpose. It only becomes a problem if a grill is made entirely of 430 and is then sold as high quality. If you live near the coast or your grill gets exposed to a lot of weather, you should pay particular attention to a high percentage of 304 stainless steel.
In addition to stainless steel, other materials play a role. Depending on the model, the grill grates are made of stainless steel, enameled cast iron or solid cast iron. Cast iron grates retain a lot of heat and create beautiful burn marks, but they require a little more care. Stainless steel grates are easier to clean and rust-proof. Flame covers, aroma rails or ceramic briquettes ensure heat distribution - it's also worth taking a look at the workmanship here. The thicker the material and the cleaner the welds, the more durable the grill head.
Number of burners, grill area and power
How big your grill head should be depends on how many people you typically cook for and which cooking methods are important to you. Basically: It's better to go one size larger, because the separately switchable zones of a large grill give you flexibility that a small grill can't offer. Nevertheless, the grill should fit the planned kitchen size.
As a rough guide, the number of burners can be determined by the number of people. A two-burner grill head is ideal for two to four people and for a compact line. Three to four burners are the most popular class and are enough for four to eight people - here you have enough space to cook indirectly and grill directly at the same time. Five or more burners are aimed at hosts who regularly cook for large groups or who also want to use a sizzle zone and a rear burner.
- 2 burners: 2-4 people, compact patio kitchen, limited space.
- 3 burners: 4-6 people, the versatile all-rounder for most households.
- 4 burners: 6-8 people, plenty of space for direct and indirect zones.
- 5+ burners: large rounds, parties, additional zones for rotisserie and searing.
The power is given in kilowatts (kW) and in itself says little about the quality. The decisive factor is the ratio of power to grill surface as well as the design. A well-insulated grill with a double-walled lid retains heat better and uses less energy than a simple grill with a lot of kW that constantly loses heat. So pay attention not only to a high kW number, but also to the overall design. A high-quality grill head reaches high temperatures with moderate power and keeps them stable - this is more efficient and pleasant to use.
Dimensions, cut-out and installation: this is how integration works
Installation is the point at which a grill head differs fundamentally from a finished grill cart. Careful planning is required here. The good news: Every reputable manufacturer provides exact installation dimensions that you have to stick to. Anyone who adheres to these values precisely will receive a precisely fitting, safe installation.
The cutout in the worktop
The most important value is the cut-out size. This is the opening that needs to be cut into the countertop or brick line so that the grill head can be inserted from above. This dimension is smaller than the total width of the grill because the upper edge (the so-called flange or support edge) rests on the worktop and covers the cut edge. Always measure twice and only cut once you have the manufacturer's instructions. If the section is too large, it can no longer be corrected.
Ventilation is mandatory
Perhaps the most critical safety aspect when installing a gas grill head is ventilation. Escaping gas is heavier than air and sinks downwards. If it accumulates in the closed substructure, there is a risk of explosion. Therefore, the cupboard or niche under and around the grill head must be sufficiently ventilated. You can achieve this through ventilation openings or special ventilation grilles in the side walls or doors of the substructure. Many manufacturers specify minimum opening areas. If the gas bottle is in the base cabinet, ventilation slots at different heights are particularly important. Take this topic seriously - it's about your safety.
Safety distances from combustible materials
Grill heads release heat not only upwards, but also downwards and to the sides. Therefore, minimum distances from combustible materials such as wood apply. If you build your row from wood, you must either strictly adhere to the manufacturer's instructions regarding distances or use a heat-resistant installation frame (insulated jacket). This insulated box encloses the grill head and protects the surrounding combustible materials from the heat. With brick rows made of stone or concrete the issue is more relaxed, but here too you should pay attention to the distances to drawers and gas bottles.
The gas connection
You have two options for the gas connection. Either you operate the grill head with a standard gas bottle (propane/butane), which is located in a ventilated base cabinet and is connected via a pressure regulator and hose. Or you can have a permanent natural gas line installed so that you never have to change bottles again - this is particularly convenient for intensive use. Important: The connection to a permanent gas pipe and the inspection of the entire gas installation belong in the hands of a specialist. Only use approved hoses and regulators, check connections regularly for leaks (with leak detection spray or soapy water) and replace hoses when their service life has expired.
Checklist before installation: Cut-out dimensions noted by the manufacturer · Ventilation openings planned · Safety distances or insulating frames taken into account · Space provided for gas bottle or natural gas connection · Working height determined · Access to technology for maintenance guaranteed.
Plan the outdoor kitchen around the grill head
A grill head only develops its full value when combined with a well-thought-out kitchen unit. When planning, it is worth thinking in zones, just like in an indoor kitchen: a preparation zone, the cooking zone (the grill head), a preparation and serving zone as well as a washing and disposal zone.
Plan enough work space to the left and right of the grill head - ideally at least 40 to 60 centimeters per side. Place raw grilled food and marinades on one side and the finished food on the other. A sink with running water makes work much easier and saves constant trips to the indoor kitchen. Refrigerated drawers or an outdoor refrigerator keep drinks and meat close at hand. Drawers and cabinets hold barbecue cutlery, spices, wood chips and accessories.
Also think about the surroundings: a grill head needs upward space. Smoke and heat exhaust must be ensured under a low roof or pergola. Keep enough distance from the house wall, windows and flammable cladding. A weatherproof, level and stable base is mandatory, because a brick row with a grill head, stone and technology brings a lot of weight. If you are unsure, get professional advice about statics and gas installation.
When it comes to materials, there are many options open to you. Rows made of weatherproof cast stone, natural stone, ceramic worktops or modular systems made of powder-coated aluminum and stainless steel are popular. Modular systems have the charm that you can build them without any masonry work and expand or rearrange them if necessary. Brick kitchens appear particularly solid and valuable, but are final. Which direction is the right one depends on your craftsmanship, your budget and your design ideas. You can find more ideas and suitable components in our large category Grills & Smokers.
Accessories that enhance your grill head
A grill head can be expanded into a fully-fledged outdoor cooking station with the right accessories. These additions expand the possible uses and make maintenance and operation much easier.
Rotisserie set (rotisserie spit)
A motorized rotisserie turns your grill head into a rotisserie. In combination with the rear burner, whole chickens, spit roasts, gyros and rolled roasts are completely crispy and juicy. The motor rotates the spit evenly, the fat drips off and the meat cooks in its own juice. When purchasing, make sure that the set fits your model.
Sizzle zone and grill plates
If your grill head does not have an integrated sizzle zone, there are searing grill plates and cast plates that create intense heat zones on the grate. Conversely, you can cover an existing sizzle zone with a smooth grill plate (plancha) and use it to prepare vegetables, fish or breakfast. This versatility makes the grill a real outdoor pan.
cover
A built-in grill head also needs protection. A precisely fitting, breathable cover keeps rain, leaves and dirt away from the lid, rust and control panel and noticeably extends the service life. Since only the upper part of the built-in grill is exposed, there are special „built-in" hoods that cover exactly this visible part. It's a small investment with a big impact.
Other useful accessories
- Lid thermometer and core temperature sensor for precise cooking to the point.
- Smoking boxes and wood chips, to add smoky flavors to the gas grill.
- Pizza stone or pizza attachment for crispy pizza directly on the grill head.
- Cast iron pans and Dutch ovens for braised dishes and side dishes.
- High-quality grill tongs, spatulas and brushes made of stainless steel.
You can find a large selection of suitable items in our category Grill accessories – from the rotisserie set to the cover.
Cleaning and care: this is how your grill head stays beautiful for years
A grill head is an investment that will last for many years if cared for properly. The good news: The care effort is manageable if you stick to a few routines. The most important thing is not to let everything get cold straight after grilling and only clean it weeks later.
After every grilling
After cooking, burn the grill on high for a few minutes with the lid closed. Leftover grease and residue on the grate char and can then be easily brushed off with a grill brush. Empty the fat drip tray regularly so that rancid fat does not collect and fat fires cannot occur. Wipe the exterior stainless steel surfaces with a damp cloth while they are still lukewarm.
Regular basic cleaning
Depending on usage, it may be worth cleaning more thoroughly every few weeks. Remove and clean grates and flame covers. Remove grease and crumbs from the combustion chamber and check the burner openings. Clogged burner nozzles result in uneven flames - these can be carefully cleared with a brush or fine needle. It is best to use special stainless steel cleaners for stainless steel surfaces and always wipe in the direction of the grinding structure. Avoid aggressive scouring agents and steel wool, as they scratch the surface and promote rust.
Stainless steel care against rust film
Flash rust are small, superficial rust dots that often come from foreign iron (e.g. from the air or from tools) and not from the stainless steel itself. They can usually be easily removed with a stainless steel care product. Regular wiping and a good cover prevent this. High-quality 304 stainless steel is significantly less sensitive than 430.
wintering
Even if the grill head is permanently installed and remains outside, you should prepare it for the winter. Clean it thoroughly, dry everything well, protect it with a cover and turn off the gas supply when using the bottle. In severe frost, it is better to keep sensitive accessories such as electronic ignitions or loose parts dry. This way you can start the new grilling season in spring without any unpleasant surprises.
A well-maintained grill head is more than just an appliance – it is the focal point of many beautiful evenings. If you dedicate five minutes to it after cooking, you will save hours of scrubbing later and will be able to enjoy a kitchen that looks like it did on day one for years to come.
Buying criteria: what you should pay attention to when choosing a grill head
So that you make the right decision, we have summarized the most important purchasing criteria again. Take your time with these points, because a built-in grill will last you for many years.
- Stainless steel quality: Visible and stressed parts are preferably made of stainless steel 304 (1.4301). The thicker the material, the more valuable it is.
- Processing: Clean welds, sturdy hinges, flush gaps and a tight-fitting lid are signs of good quality.
- Burner equipment: Enough pipe burners for your number of people, optional sizzle zone and rear burner for more versatility.
- Grill area: Suitable for the planned kitchen and the typical number of guests - preferably a little more spacious.
- Installation dimensions: Full information on cutout, ventilation and safety distances from the manufacturer.
- Grates: Solid stainless steel or enamelled cast iron – depending on your preference for ease of care or heat retention.
- Ignition: Reliable piezo or battery ignition, ideally for each burner individually.
- Equipment: Lid thermometer, interior lighting, warming rack and illuminated control buttons increase comfort.
- Spare parts supply: Look for brands from which you can still buy burners, grates and ignitions years from now.
- Warranty and service: A solid manufacturer's warranty, especially on the burner and housing, indicates trust in your own quality.
Safety when operating a built-in grill
Because a grill head is permanently connected to your gas supply and is installed in a kitchen, the issue of safety deserves special attention. With a few basic rules you can operate your grill worry-free.
Check the gas connections regularly for leaks, the easiest way is to use leak detection spray or a little soapy water on the connection points - if bubbles form, gas is escaping. Only use approved pressure regulators and hoses and note their expiration dates. Make sure that the ventilation of the substructure is free at all times and is not blocked by stored objects. Always light the burners with the lid open to prevent gas from collecting under a closed lid. Never leave a burning grill unattended, especially if children or pets are nearby. Keep a fire extinguisher or fire blanket handy - never pour water on a grease fire. And after grilling, turn off the gas supply at the bottle or at the main tap, not just the burner controls.
These rules sound like a lot, but they quickly become routine. A correctly installed and maintained gas grill head is very safe to use - especially because the technology is firmly installed and protected.
